Abstract
Locust beans offer nutritional and medicinal benefits, but their complex processing methods limit production quantities. This project aims to enhance locust bean availability across seasons through a comparative study of lateral and non-lateral spacing locust bean dryers. The dryers were designed and fabricated, and locust bean seeds were processed, fermented, and dried using both drying methods. Results indicate that lateral spacing achieves optimum dryness faster, with moisture content loss averaging 0.15kg compared to 0.50kg for non-lateral spacing. Increased temperature accelerates drying efficiency, making lateral spacing the preferred method for preservation.
